how do i really tune my zuma? lame question of the year 08 but help

hay guys
i bought a 05 zuma with some modzz.

it has an arreche carb, some carbon ricer exhaust and a 70cc piston and intake.

all the stuff came from moped hospital racing or something in key west from the previous owner. anyways i reinstalled all the stuff after the throttle cable broke and it breaks up really bad under part and full throttle until about 37ish mph...i would say rpm but ...its a moped with no tach and im definately not hooking one up.

this is my 1st vehicle ever witha carburator and other than an idle screw i don't really have anythin ot mess with other than rejetting it, which is about where i'm at.

sooooo heres my question being a carb and a 2 wheel / 2 stroke n00b to life.

what is the rule of thumbwise other than trial and error to get this thing running properly? some of my freinds are like dude that thing sounds mean but in all honestly anyone on campus including myself who knows what an engine sounds like when its running 1/2 way right can tell my moped just breaks up really bad under part throttle.

also no i have not yet checked changed the plug, my other subquestion was what gap do you normally put them at on a 2 stroke or does it even matter? still kinda new to the two strokey stroke thing too.

Who'd trade a zuma for a ninja? I'd be on that so i could go onthe highway.

I put lower octane gas in it just to toooy with that thought pattern, seems to run better so it may be something with timing but i have no clue how these little motors are run ignitionwise, havent looked.

Let someone who knows mopeds take it around the block. "Break up until 37ish mph" means nothing to me, except it's not running well. I have a 2005 with 70, carb, clutch, and pipe so I can maybe help you out on how it should run.
