From the west side,

head down towards crab river road, then cow creek, and then to 288 and bluewater
google map it

I usually headed out towards 359 from Brookshire then over to CRR.

Bluewater highway is a nice road along the beach but just a straight shot pretty much. Depending on if there is a south wind you have to watch for sand on the road along with all the beach access areas. Its a little out of the way from Jersey Village but a nice ride if you take all back roads to get to Bluewater. Watch for speed traps once you cross the toll bridge onto the island. Another route, if youre ready for a ride is the back way from I-10 through Winnie and Boliver and finally across the ferry.Its a good ride but depending on the time of year you might sit at the ferry landing for hours. Roads like 146, Hwy 6,Hwy 3 and 2004 get you close but 146, 3 and 6 are filled with lights so its slow going. 2004 is wide open to see what your bike can do if youre on the South side for some reason, watch for cars passing each other coming at you though and deer and hogs!

you could ride 35 to 6 then jump on 45 for the last ten miles.

but +1 to the crabb river road-1462-288-bluewater highway route. have cash for the san louis pass bridge

Highway six from Sugar Land works...not bad at all, or 36, then NE up the coast, but watch for sand and drunks....oh and watch highway 6 intersections in the small towns: lots of cross traffic, lots of bars and yeah, be careful

I don't think there is any winding back roads, if that's what you are after. Since I live practically right off Hwy6, that's how we usually take to Galveston. It is lucydad said, nothing spectacular, but easy enough cruise and better than swinging up to pay toll on BW8 and have to contend with 45.

BTW, does anybody know if the Ferry to Bolivar have provisions (tie-downs) motorcycles? I don't mind bringing my own harness as long as there are tie-down points.

The Boliver ferry dwarfs the Lynchburg ferry. Even the Lynchburg ferry is an uneventful easy cruise.
