Ride height.

Would changing from a 130/80/16 tires to a 150/80/16 effect the ride height that much or at all?

Id stick with the manufacturer reccomeneded size. What are you trying to accomplish? You're looking at a 1.6cm taller tire.

Tires are measured: width in millimeters/percent width in height/rim size

So youre 130/80/16 has a cross section height of 104mm

The 150/80/16 has a cross section height of 120mm

That works out to just over 5/8 of an inch taller cross section.

Yes it will, but probably not enough to negatively affect geometry.
I'd be more concerned with how the additional weight of the tire will take away from the 250 Ninjas ability to accelerate and slow down.
