I've only ridden a jetski a couple of times in my life. Since you have no brakes, I'm going to go on a limb and say the bike will win.

Curious what the hardcore jetskiers in the group think..

I had one for several years when I was younger. Everything would be somewhat doable, until the diamonds edge. It would be schetchy as coming off the back straight and trying to make those turns, without any type of brakes.

PWC's often race "supercourse" races with buoys marking the turns, long straights and tight turns are not at all uncommon, but a ski could never keep pace with a superbike due to their respective maximum speeds.

Makes me miss boat racing. Used to see unlimited hydroplanes , miss Budweiser etc, and even jet ski/ formula 1 boats race. Was cool stuff.
