Mountain biking definitely helps with the cardio and leg endurance. Be careful though as it can become a whole other money consuming hobby. I've actually thought about selling the SV so I can build a couple bicycles.

right... its all about the cardio too. I started riding bikes with the kids for 20 minutes a day then doing a workout with them...it is kicking my , but making it prettier all at the same time
My thighs hurt on the way in this morning but I think it is mostly because I hold on with my legs.
Start out easy though Chris and stay on a schedule so your body adapts to it.

try hiit training coupled with a weight lifting routine (to minimize muscle/strength loss) and a clean diet

What you do is not as critical as just doing something? Walk, swim, jog, bike, circuit train, isometrics, rock climbing, etc...

Get to it, elevate the heart rate, stretch and drink water! There is no magic formula.
