here, this is a variation on kalmar's super secret special turkey rub

3/4 cup dried thyme
3/4 cup paprika
1/4 cup garlic powder
1/4 cup onion powder
1/4 cup ground white pepper
1/4 cup ground red pepper
1/4 teaspoon salt
1/4 cup ground black pepper

Grind all contents in mortar/pestle. You end up with enough to rub to do several turkeys (I did 5 - 12lb turkeys and had some leftover), and still have some leftover to do some chicken come spring
