...guess you went for the R1. Guess didn't see my R6 FS post in the for sale section. Fully set up with Ohlins, etc, etc for close to your weight.
Well, enjoy what you have.

I've seen a few Triumph Daytona 675's at the track. Any thoughts or recommendations on a 675 vs a 600/750 as a track bike?

Check with SwiftE on this bbs, he's selling his (675) and it's very well set up with all the track goodies.

I've ridden it at TWS (Texas World Speedway) and I really, really like it! It's very nimble and flickable, reminds me of the 600RR to be honest, but has MORE POWER (at least using my seat of the pants dynometer...).

There are more and more of them showing up on the grids of the CMRA. Very potent bike. Check with SwiftE about his, I think he's letting it go cheap.

Now, "vs" the other 600s, it's a wash except for parts availability. The 675 is going to be more expensive to upkeep and get parts for vs the other bikes, but as far as performance, it's pretty well a wash. The 675 does "feel" like it has more power though.

I have a GSXR 600 for sale too, and it's a great little bike, but to compare it to a 750 is like apples and oranges. The 750 literally has as much power as most liter bikes do.

The best thing about the 750 to me is that they pretty well handle like a 600, but have the power of a liter bike. Can't complain about the 750 at all.

All that said, the 675 is a really good starting platform, the 600s are easier and cheaper to modify/ repair, and the 750 is the "best of both worlds" with the 600 handling and 1000 power.
