The difference is in the washed hands of the chefs...

I agree with bc and no fear - it is hazardous to your health to eat cheap sushi.

If you are a real connousieur and want to save some money - buy sashimi quality raw flash frozen fish in japanese market - Nippan Daido on westheimer and wilcrest. Then cut it up in slices perpendicular to the grain and boil some rice. Consume with chilled vodka or hot sake.

I always eat expensive cuts like toro like that fairly cheaply.

Veggie sushi is fake btw

Azuma = fresh, very fresh. The fish has been caught within the last 24 hrs or its thrown away.

First of all there tons of different species of salmon. Secondly there is wild and farm raised. Then farm raised can be different depending on what feed they use and what coloring they add. Finally, you have to flash freeze the fish or immediately gut and consume the flesh. That's if you want it raw.

When fish dies, the parasites that normally live in its gut start burrowing into the flesh of fish. So taking guts and gills out is very important. That still doesn't guarantee parasite free flesh, as in many spicies the parasites already live in the flesh while the fish is alive!
