Prohibition was great for me.

When prohibition started my great grandfather, Mayo Bessan, left the New Orleans restaurant business for Laredo, Texas.

He promptly crossed the river into Nuevo Laredo, Mexico and started up what would become the World Famous Cadillac Bar - thus skirting U.S. drinking laws.

He brought with him many of the old-world French recipes from his days in New Orleans, a good mix of Cajun fare from his family books, and mixed in a healthy dose of the local Mexican cuisine, to create a menu with everything from turtle soup to cabrito to ettouffee.

Here was born the world famous "Ramos Gin Fizz."

The Cadillac was a favorite among movie stars, athletes, Texas Aggies and even the occasional Texas Longhorn of the day.

Operation of the restaurant was assumed by my grandfather, and he ran it succesfully until I was born in '79, when he gave it to his employees and we all moved to Kerrville.

The Cadillac Bar that you see today, owned by Landry's, is Cadillac in name only.
