Cool Etouffade

Well made this the other night with great success.

Items you will need:
3 lbs of chopped beef
2 white onions(med-lrg)(Cut onions into 1/4's. )
1tbl spoon of flour
.5 liter of red wine
.5 liter of beef stock or water
4 thick slices of bacon
1 carrot(slice it up)
1 package of shrooms
50g of butter(mmm butter)
2 bay leaves
2-3 pieces of thyme
Handful of Parseley
500 grams of green olives
3-3.5 hours of time


Open the bottle of wine and pour yourself a drink(all good chefs drink fyi thus you may want to have another bottle handy as well)

-Cut bacon into small pieces and plunge it into a small pot of boiling water for about 2minutes.
-Remove bacon and dry.
-Heat a large pot. Place butter in the pot then add bacon and cook until brown. Remove and reserve bacon for later.
-In same pot (yes its got juices in it now) brown beef, onions and add flour. Stir constantly to make sure flour becomes brown.(about 5-10 minutes.(good time to add 3-4 pinches of salt and pepper)
-add in the liquids, carrots, herbs(herbs are good)
Bring to a boil. Cover. Lower heat (should be around a 4/10 maybe even 3)until slightly boiling and let it for about 2.5 hours.
Uncover and add mushrooms, olives and bacon(the stuff we started with).
Cover again for about 30 minutes. Then cook uncovered for a few just to thicken up a little more if needed.

Remove from heat and serve with rice or mashed potatoes

"Eh too fahd"

I'm guessing by the ingredients that this is a just a play off a traditional etouffe' like all rue based dishes, eh?

I make a stew in much the same way.

actually I think they play off this since it is from the mother land
