Gloves, anyone?

Add some velcro around the wrist, and these would definitely hold up to a spill or two.

So, they show cut and fire protection.
What about abrasion resistance at 80mph?

Yep. There are a ton of them out there, and most only have rubber padding on the knuckles for minor bump protection. Know of any with that much hard armor for the fingers and back of the hand?

Dunno. Google is devoid of videos showing extrication gloves being put to a grinder. Extrication gloves are pretty darn durable, though. As long as the seams hold, the rest of the glove should handle anything a rider would put it through.

I would be interested in seeing an abrasion test on some of these.
