Is he braking to the apex then coasting through the corner? Or is the 'throttle' indicator wrong.

It appears that the display has a bit of lag to what he's actually doing. It also sounds like he's "maintaining speed" through the corners, not coasting.

He's trailbraking then opens the throttle back up at the apex or just before it. Everytime I saw his throttle at 0 he was braking or downshifting. But there is a lag between the camera and when he actually opens it up.
