The UJM has finally achieve classics status. I've always like the late 70's and early 80's UJM inline4's.

I would keep it looking the way it is. The bike in post #9 is decked out to the nines and a good plan to follow. Instead of what looks like a dry sump conversion, you could just add an oil cooler, which was what I did with my '80 Yamaha XJ650 many moon ago. Upgrade the suspension and brakes, may not to pricey Ohlins, but Progressive has some nice shocks for these classics. I would keep the exhaust if they are in good shape, otherwise you'll have to rejet the carbs with anything else, which is a real PITA unless you find somebody who knows what he's doing. Conversion to 17" wheel so you can put radial sportbike tires on would be a big plus. If I could do only one mod, that would be it.
