Ok for tortilla style we can go to my buddy's restaurant called Shanghai, was ranked #4 for best peking duck in Houston.

Only a handful of restaurants make the peking duck themselve. Most of them get them delivered from Dynasty market's chinese bbq shop. Therefore they are all good no matter where you go, except you wanna go where they have more turnover. Shanghai is very good, not only for their duck but also other dishes. Both tortilla(more like pancake or crepe) and bun styles are original chinese styles.

Arco Seafood are the best in town, but i do go to shinshin sometimes for lunch and get their roast duck and roast pork combo.
