+1 on the under armour. I wear their coldgear shirt and pants when I work, under my Nomex. And they work just as well for riding. I have a hard time finding the gloves though.

I use one of these:

usa scarf

It's called a scarf. It wraps around your neck with the ends tucked inside your ridding jacket.
