Usually they protect bystanders from legal action for helping in emergencies. Eg if u see someone collapse and then crack their ribs giving CPR or if you cause spinal damage dragging someone from a burning car etc.

However they sometimes have a negligence clause though I'm hazy on what that covers.

I would suggest doing some further reading if you're worried about it..

good samaritan laws cover the lay person purdy well. it gets kinda mucky when trained people get involved regardless if they are off duty or not. trained people have to stay within their training/legal guidelines even if they are on family vacation
