It depends largely upon the purpose of the engine really.

I4s are great for high-rev horsepower. They suck for low end torque and they're inherently not a very smooth engine.

V2 (or L2, B2, P2 or I2 for that matter) are great for low end grunt, and have a solid mid-range, but nothing to speak of on the high-end.

V4s, like triples, are a compromise and they do it well, but still a compromise.

Inline 6? Only one bike with one now (No, i havent forgotten the CBX or whatever that was from Kawi) and it appears to be the best solution for its intended purpose.
