How do you choose the type of handlebar?

As title suggests, I am needing to get a new handlebar. I currently have a motocross style handlebar, which is now slightly bent. I would like to go a little lower on the rise, but how do you know which handlebar is right?

It is not like you can get one of every style and put it on the bike to see how it will feel.
